  4. The U.S. approves a substitute

  7.     People who love the taste of fat but hate to think about
  8. what it's doing to their arteries will soon have a way to feel
  9. less guilty at dessert time. Last week the Food and Drug
  10. Administration approved the sale of a creamy fat substitute
  11. that consists of proteins from egg whites and milk. Called
  12. Simplesse and made by the Nutra Sweet Co., the new product will
  13. be allowed only in imitation ice cream and other frozen
  14. desserts, but it could eventually go into many more foods,
  15. including mayonnaise and sour cream. Simplesse cannot withstand
  16. heat and so will not be used in cooked items. It has less than
  17. one-third as many calories as the same weight of fat.

  19.     The new product is only the first in a series of substitutes
  20. being developed by such companies as Procter & Gamble,
  21. Frito-Lay and Best Foods. P&G is seeking approval for a
  22. heat-resistant, calorie-free, synthetic compound called olestra
  23. that can supposedly replace fat in almost any food.
